Product description

This is a 300mm Mizuhonyaki Yanagiba, a trditional japanese knife designed for slicing fish and other proteins. The knife was forged by Yuzan, the father of the renow ed blacksmith Shogo Yamatsuka. Yuzan was a very famous (even legendary) blacksmith in Sakai, renowned for his mastery of Mizuhonyaki (water-quenched honyaki) knives. Mizuhonyaki (水本焼) is the technique of water-quenching knives that are differentially hardened with the use of a specific clay. Compared to Aburahonyaki (oil-quenched), Mizuhonyaki results in a harder knife, though the difficulty (and consequently the failire rate) is much higher resulting in a steeper price. This specific knife was forged around 50 years ago (though I am not sure, resulting in very hard steel. Since Yuzan unfortunately passed away many years ago, his knives are exceptionally rare, even in Japan. I originally bought this knife in February 2025 on my trip to Sakai, when visiting Shiroama Hamono. The handle is made out of beautifully dark ebony wood with both nickel silver bolsters amd three rings. The knife was never used or sharpened but long term storage may have led to minimal imperfections like tiny rust spots or scratches, though I am not aware of any… Otherwise both the handle and the blade seem in very good condition to me (basically mint condition). I am selling this knife because I frankly have no use for it at the moment, since I already own amny other slicers, and I believe it‘s a shame for such a beautiful knife not to be in use. The knife comed with a magnolia wood saya and a pin. The choil is beautifully polished and the spine is quite rounded too.
