A workhorse gyuto. - Not too thick and not too thin to be afraid to cut butternut squash or pumpkins. Chopping herbs, and vegetables is no problem for the blade near the handle; the tip is very fine for precise work.
Hardened to 61 Rockwell with cryo treatment to get everything out of the steel.
Sharpened by hand all the way to a 13000 honing stone at an approx. angle of 12 degrees each side and with micro bevel. There are a couple small micro swirls from polishing the edge while hand sharpening.
The handle is made from grenadill wood with 3 stainless steel pins and finished with a natural hardwax oil
Knife is new and unused and comes well packed in a leatherette pouch.
