A knife to help you break down poultry and other proteins in record time. Tadafusa is a maker much loved by chefs and this knife will show you why. This honesuki sits at just the right thickness - it retains enough thickness to safely be in contact with poultry bones regularly but is not as thick as some more traditional honesukis meaning that is much more versatile . The knife itself is in excellent used condition - there are a very small number of shallow scratches that could be polished out easily.
