Product description
Beautiful Gyuto in Ginsan steel, forged by Satoshi Nakagawa, sharpened by Myojin.
Kagekiyo's are famous for their grinds and this is no exception, extremely thin behind the edge and overall throughout out (see choil).
Lightly used, I tried to capture a few light scratches on left side of the blade visible only under certain angles from cutting hard vegetables. A few near the handle from the magnetic rack.
The migaki finish in fact is very delicate.
I removed the lacquer on arrival.
Fit and finish is stellar as expected, mirror polished choil and spine.
The walnut handle is gorgeous and very unique in shape and design.
