Modified Victorinox Heavy Chopper, Cutter, Lobster Splitter, Butchers Knife, Chef Knife.
Length of the cutting edge is 332mm, measured in a straight line. Overall length is 482mm. Height of the blade at heel is 75mm. Handle is 158mm long. Thickness of spine at handle is 5mm and 1.75mm at the tip. Weight is 815g. The steel is Swedish Sandvik 12c27 now called Alleima 12c27. I tested hardness at 58 Rockwell.
Very heavy chopper. I modified the knife and thinned the front third to improve cutting performance. Also sharpening angle in the front changed to approx. 16 degrees each side (original 20 degrees)
I use an identical knife every day at work portioning pork chops on the bone for example: the back will chop through the bones with ease, while the front improved and still very sturdy tip will cut precisely through the loin meat, I can do the job with one knife rather than using two. Also splitting lobster like through butter.
The handle is sturdy and large brown pakkawood and I added a mosaic pin at the end. This knife is new and has never been used.
