Product description
I commissioned this knife from a Polish maker. At the time of ordering, my knowledge of knives wasn't quite sufficient, so ultimately, the knife didn't fully suit my tastes. I used it mainly at home; unfortunately, when slicing hard produce like carrots or squash, the vegetables would crack due to the overly thick "S-grind." I decided to thin it out, which achieved the desired result—preventing the produce from cracking during slicing. After the thinning process, I accidentally struck the blade against a part of my workshop, chipping it halfway along its length. The handle was also replaced with one made of oak and finished with urushi lacquer, as the original ebony handle was too heavy for such a thin knife. Spine and choil are polished
