Product description
Hand crafted Ajikiri or Ko-deba meaning small Deba Knife. Steel is Japanese Shirogami #1 clad in SUS 405 stainless steel. Length of the cutting edge is 105mm, measured in a straight line. If you follow the edge, it is just about 110mm long. Overall length is 245mm. Height of the blade at heel is 37mm. Handle is 130mm long on top and 120mm at the bottom. Thickness of spine at handle is 3.35mm, 1mm at the tip. Weight is 117g.
Hardened with quench in hot salt water to get everything out of the steel. Tempered to 62-63 Rockwell.
The handle is eight sided Japanese wa style made from walnut root wood, elforyn ivory and ebony wood ferrule. The cutting Shirogami steel middle layer is blackened, oxidised, which will protect it up to a certain degree from corosion until a patina has developed. This knife is made from a pre-laminated piece of Takefu Shirogami 1 and SUS 405 clad steel with hammer marks. I shaped, hardened polished, sharpened and honed it, made the handle from the special old walnut root timber. Double bevel sharpened on both sides so suitable for both left and right handers. Very sharp, easy to resharpen and due to the robust construction not as delicate to chipping.
