Shigeki Tanaka R2 240mm gyuto. 241x55 233 grams. I am sad to see this go! I’m a huge Shigeki Tanaka fan, I’ve owned 8 of his R2 knives at this point, and this one will get replaced at some point. His R2 is the best stainless I’ve ever used, including Yamatsuka and Nakagawa Ginsan, very hard, easy to sharpen, and wickedly toothy. This particular example is one his special models with a beautiful mono ebony handle. The etch on this one is particularly nice, and f+f is excellent for Tanaka. Perfect middleweight convex grind, very thin bte and still very authoritative. Purchased from meesterslijpers recently. Cost just under $600, unfortunately I need to let this one go!
