The Ikeuchi Sakimaru-Gyuto is collaboration between SharpEdge and Ikeuchi Hamono, combining traditional blacksmith design with a contemporary blade shape. The blade features an intricate tsuchime finish with a sand-blasted kasumi line and a single bevel grind, allowing for a sharper angle and cleaner cuts. The wide profile of the knife makes it ideal for precise and complex techniques like julienne or katsumaruki, while the 220-millimeter blade is perfect for longer pulling motions when slicing meat or filleting fish. The blade is made of Shirogami #1 steel and is suitable for right-handed users only.
This particular knife is a prototype. It doesn't come with a handle, but I can make a custom handle beforeshipping it.
