Product description
A unique collaboration piece by Slovenian knifemaker Žiga Močnik (Mocnik knives). One-of-a-kind, with not one exactly like it in the world. Ground and sharpened entirely by hand.
It has an S-grind so it is incredibly thin and lightweight, with great food release. Extra careful use is recommended due to the thinness of the blade. Any excessive torque to the blade may result in a damaged knife. The blade is warikomi laminated, the HAP-40 core is surrounded by stainless steel.
In the clad area the S-grind reveals the hard HAP-40 core, giving the blade a unique spotted appearance.
It is fitted with a premium octagonal ironwood Japanese handle, topped with a marbled buffalo horn ferrule.
Overall length of the knife: 337mm (13.3")
- Blade height: 50mm (2")
- Spine thickness: 2mm (0.08")
- Handle length: 135mm (5.3")
- Weight: 130g (4.6 oz)
The knife comes with a handmade wooden saya by SharpEdge.
The definition of sharpness, in our experience, is a very hard steel that can be ground to the thinnest blade profile.
To achieve this, we need incredibly hard powder steel, correctly processed by extremely experienced blacksmiths that can achieve very fine and homogeneous steel particles and great hardness!
Not an easy feat, but Osamu-san from the Yoshida Hamono smithy is one of the few blacksmiths who can do it. He is highly experienced in the field of HAP-40 steel as he has been working with HAP-40 powder steel for many years. He is one of the few who can laminate, forge, and heat treat it by himself in his workshop. To ensure optimal quality, we got the HAP-40 steel for this blade directly from him.
The blade was shaped and sharpened by Žiga Močnik, a young incredibly talented sharpener who has been professionally sharpening and grinding knives for the past 6-7 years. Although this is not such a long time, his youthful enthusiasm and total focus on knifemaking and sharpening have made him one of the most experienced sharpeners and grinders out there. He is currently acquiring formal education in metallurgy science and has also mastered the art of Japanese traditional sword polishing. He has extensively optimized his machines to achieve extreme precision and he can produce only tiny batches, primarily for his enjoyment and love of the craft. It took a lot of his knowledge and many hours for him to grind out a blade profile such as this, and the results are incredible!
He brought the blades to SharpEdge, an EU-based shop where we offer the largest selection of Japanese knives in Europe. In the many years of working with Japanese knives we have seen it all, but the whole team agrees that Osamu-san's powder blades ground by Žiga Močnik are the sharpest beasts out there!
