The blade of this knife has 3 layers, manually forged by the cutter, Teruyasu Fujiwara. Stainless steel on the outside and carbon steel on the wire.
The Denka no Hoto, which translates to ‘Treasured Family Sword,’ is made from Aogami Super, the undisputed king of knife steels. It keeps a ridiculous edge longer than almost any other Japanese knife steel and doesn’t rust nearly as easily as other high-carbon steels.
Fujiwara-san knows that chefs hold their knives by the blade in a ‘pinch-grip,’ so he created an iconic notch at the back of the knife for one’s index or middle finger to rest in. His knives are a joy to wield all day long, making them the go-to for chefs and home cooks with a taste for the finer things.
The Gyuto knife (Chef’s knife), ideal for families and professionals, is Fujiwara’s most popular knife. The series of Gyuto knife, Denka has a sandwich structure with stainless and top glade steel (aogami (blue paper) super). The surface of the blade is Uchidashi finish and this series is the highest class product. The steel (aogami (blue paper) super), which is blue steel called aogami (blue paper), is highest class steel that is developed for blade making an alloy of high purity steel (shirogami (white paper) )and tungsten and chromium. Since aogami (blue paper) has tenacious and abrasion resistance, it has less chip in a blade and loose strength than shirogami (white paper). The raw materials are made by Hitachi Metals, Ltd.
