Product description
From Sanjo; Tsuaka Hinoura's Son, is Mustumi Hinoura Ajikataya lineup of Shirogami #2 carbon steel. This Sujihiki is 240mm with a Kurouchi finish with a kasumi(hazy polish) on the bevel which then nicely transitions to a mirror polish along the edge. Handle is burnt chestnut wood handle/Buffalo horn ferrule. Great
begginer carbon steel knife for a butcher or
even a trained chef.
Absolutely no imperfections from the blacksmith/sharpener.
I own 2 of these but the other one has imperfections on the finish on the Kurouchi.
This one is immaculate.
