Yoshikane Hamono makes some of the best perfoming knives, their grinds are iconic and let you cut like food is not even there (scary thin behind the edge and at the tip).
This gyuto is no exception, not used (just few test cuts basically new) only because I purchased a taller one in Kiritsuke shape. It has still it's ootb edge which is impressive if not one of the best.
The finish is Nashiji, very smooth on touch.
Steel is Skd, a semi stainless steel Yoshikane heat treats to perfection. Extremely hard, sharp, easy to sharpen, very good corrosion resistance.
Impressive distal taper from 4,3 to 0,2 at the tip!
Custom handle in beautiful mono octagonal olive wood.
