I am a chef in Chicago and I had a Kikuichi phase where I ended up grabbing a kirisuke, a mini deba, carpenter knife as well a deba/gyuto hybrid. I ended up accidentally getting a left handed yanagiba. Foolish mistake, I’ve sharpened it on my whetstones. 1000, 3000, 6000, a few passes on a 8000. Finished with leather strop. Not a knife I currently need or can use given I am right handed. Perfectly ready to use out the box. Description is down below.
