This professional sharpening steel is a vintage specimen, recognizable by the black wooden handle and retaining ring, often used in professional gastronomy and the butcher's profession. The original Dickoron sapphire cut allowed knives to be sharpened without removing too much material and still achieve perfect sharpness. In order to sharpen the blade optimally, the blade should be guided several times alternately from left to right at a 15 - 20 ° angle over the entire length of the Dickoron sharpening steel.
