This Deba is my 2 years old partner.
I forgot what type of steel it is and the HRC.
My way of sharpening the Deba is that i only touch up the tip part of the Deba and leave the heel part deliberately dull. So this Deba will have a sharp tip part and a dull heel part. Why is that, because i do most fileting work with the tip part of the deba, and the heel part is only for chopping of the bone so it doesn't have to be that sharp.
