Isamitsu Knives are made in a small workshop in Ibaraki JP by Abu Kuki and Gaku Kanatsu, former apprentices of Teruyasu Fujiwara.
This gyuto is one of their top offers, in aogami super heat treated to perfection, and stainless clad.
The finish is beautiful and has a very unique tsushime style on a black Ku.
It has been never sharpened and has an insane ootb edge that went through a few test cuts (very light patina on part of the edge that can be easily removed on request).
Thinnest knife I have ever seen, grind goes to 0 well before the edge (see choil shots).
The handle is absolutely stunning with a premium ebony octagonal and white horn ferrule with stripes.
The transition between the two materials is flawless.
