Selling a knife from my private collection – a custom Gyuto handcrafted by Mr. Hiro (Midori) Itou, one of Japan’s most respected master bladesmiths.
A classic Gyuto, with a 183 mm cutting edge, forged from R2 (SG2) powdered steel, heat-treated to about HRC 62 for exceptional edge retention and sharpness.
Double bevel (symmetrical) sharpening.
Handle made from Dupont turquoise gem-composite stone, beautifully polished and moisture-resistant – both elegant and practical.
The knife is brand new, never used, and has been kept in a climate-controlled collection display.
Personally received from the master himself – proof photos and documentation available upon request.
