Suncraft has been forging in Seki, Gifu Prefecture since 1948, the historic center of Japanese blade craft. The Senzo Finest is the family workshop's newest and highest line, and the ZB-01 is its smallest knife.
The cutting core is SPG STRIX, a powder steel from Takefu Special Steel that was only introduced in late 2023. The name stands for Strong Matrix, which describes exactly what makes it unusual. The grain structure is fine and uniform enough that the blade reaches 65 HRC without turning brittle or fighting the whetstone. That combination of extreme hardness and easy sharpening is rare among Japanese steels. Edge retention is noticeably better than SG2 or VG-10, and the blade stays highly stain resistant.
The hard core is clad on both sides with softer stainless steel in a three layer San Mai construction. The upper half of the blade carries a black kurouchi finish with hammered tsuchime texture, which helps release food from the face. The octagonal handle in striped pakkawood follows the classic Japanese wa style and works for right and left handed users.
Forged and hand sharpened in Seki. Hand wash and dry immediately. Not intended for bones or frozen food.
