Product description
This is a 240x55mm Isamitsu gyuto made out of White #1 with stainless clad. It weighs 206g and has a kurouchi finish with ebony handle. I’m the second owner. The first owner used it to prep a couple meals, and I did the same. The knife is in excellent condition. Please see pics and video.
Here’s a further description copied and pasted from Stay Sharp:
Gaku Kanatsu and Abe Yuki are two friends and colleagues with over 20 years of combined experience in the world of Japanese knives and forging. They worked for Teruyasu Fujiwara for a long time and founded Isamitsu together. They offer us knives with a unique and rustic look. This is where the expression "Wabi-sabi" (perfection in imperfection) takes its full meaning. The influence of Teruyasu Fujiwara can be seen in the products offered by Isamitsu, while at the same time being innovative and having their own identity. Made of Shirogami #1 steel, coated with stainless steel, these blades are razor sharp and protected against oxidation on most of the surface.
