Hand crafted HAP40 Santoku knife. Steel is Japanese Yasugi HAP40 powdered steel clad in SUS 410 stainless steel. Length of the cutting edge is 171mm, measured in a straight line. If you follow the edge, it is just about 175mm long. Overall length is 234mm. Height of the blade at heel is 47mm. Handle is 133mm long. Thickness of spine at handle is 2mm, 0.85mm at the tip. Weight is 136g. Convex grind and brushed finish.
Hardened and tempered to 66 Rockwell.
The handle is eight sided Japanese wa style made from wenge wood and East Indian rosewood ferrule. This santoku knife is made from a Japanese pre-laminated piece of HAP40 and stainless SUS 410 clad steel. Double bevel sharpened on both sides; suitable for both left and right handers. HAP40 is considered a semi-stainless steel, stays sharp for a very long time compared to other steels and is quite easy to sharpen, with other words a very balanced knife.
