Product description
I am selling a rare Japanese sashimi knife – Masamoto Sohonten Yanagiba. Masamoto is a name that every professional sushi chef in Japan pronounces with respect, and this example comes from their esteemed Mitsuhisa line.
The knife is a true "hand-forged" unique, as confirmed by the engraving 手打 (Te-uchi) on the back of the blade. It was made in Tokyo, probably in the late 80s, from top-quality Japanese carbon steel.
Brand: Masamoto Sohonten (Tokyo).
Type: Yanagiba (Sashimi knife).
Construction: Hand-forged, single-sided ground (for right-handed people).
Features: Incredible balance and geometry of the blade that allows for surgically precise cuts.
Condition: Authentic vintage condition with a beautiful patina. The blade is healthy, without "smiles" or deep rust.
This is not just a knife, but an investment and a professional tool that will last a lifetime.
Perfect for serious chefs or collectors of Japanese steel.
