Brilliant stainless steel petty forged by Yoshimi Kato for Kanehiro brand. Ginsan is an excellent steel; good edge retention, great sharpenability and completely stainless. Beautiful handle: ebony handle with a white buffalo horn collar and cap with silver spacers. A great knives for chefs.
