The Hokiyama Gyuto Aogami Super Tsuchime knife, featuring a 210mm (8.3") blade length, is a high-performance tool suitable for professional users and experienced home cooks who appreciate and know how to care for high-carbon knives. This knife combines the classic design of a Western-style handle with the quality and craftsmanship of Japanese blades.
The gyuto blade shape, similar to a Chef's knife, makes it versatile for various tasks, including preparing large quantities of vegetables and meat. The 210mm length strikes a balance between maneuverability and functionality, making it suitable for everyday use in both professional and home kitchens.
The blade of the Hokiyama Gyuto is made of Hitachi's Super Blue Steel (Aogami Super), which is renowned for its exceptional quality among Japanese steels. Aogami Super steel has a high carbon content, contributing to its hardness and edge retention. It also contains 0.4% vanadium, enhancing its toughness and overall performance.
While high-carbon steels require more maintenance to prevent rust and maintain their sharpness, Hokiyama has incorporated two outer layers of rust-resistant SUS405 steel to offer additional protection. The Aogami Super steel remains exposed at the cutting edge, ensuring excellent sharpness and ease of sharpening. The blade has been heat-treated to a hardness of approximately 63 HRC, resulting in remarkable sharpness and edge retention.
The upper part of the blade features a black, untreated finish known as kuro-uchi, which is a residue from the heat-treatment process. This unique feature adds a rustic appearance to the knife, while the hammered tsuchime finish not only enhances its aesthetics but also prevents food from sticking to the blade during cutting.
The knife is equipped with a western-style (Yo) ergonomic handle made of durable laminated pakka wood. It is secured to the tang with three stainless rivets, ensuring a comfortable and secure grip. The stainless nickel-silver bolster provides a smooth transition from the handle to the blade.
Hokiyama Hamono, the blacksmith behind this knife, is a renowned smithy located in Kochi Prefecture, Japan, with a history dating back to 1919. They adhere to traditional hand-made blade techniques while incorporating modern metallurgical knowledge and production innovations. Each knife undergoes around 50 meticulous processes, including the unique Rolling-Forging technique, which ensures efficient and uniform production while maintaining the integrity of the Japanese steel.
Please note that while the blade is new, there is a small scratch visible in photo number three, which does not affect the knife's overall performance.
