I’m selling my new Muneishi Aogami #2 Gyuto 21 cm. This is a high-quality Japanese knife, perfect for both home cooks and professionals. It’s brand new, never used, and has been upgraded with a custom handle worth €140 for better aesthetics and grip.
The blade is made from Aogami #2 (Blue #2) carbon steel, known for its excellent sharpness, edge retention, and easy sharpening. It has a kasumi finish, giving it a refined, misty look. This is a hand-forged knife from Muneishi Hamono, a small blacksmith workshop in Japan specializing in high-performance carbon steel knives.
I’ve replaced the original handle with a custom blue-green stabilized wood handle with a buffalo horn ferrule. It offers a unique look, improved durability, and a comfortable grip.
Prices for this knife and custom handle combo comes closer to 300 euros but I’m selling it at a discount because of a laser engraving on the blade (check the pictures for details). Despite this, the knife is in perfect, and very slightly used.
