Product description
Hand crafted one of its kind Slicer, Sujihiki, Filleting Knife. Semi- rigid or semi-flexible. Steel is Swedish Sandvik ( now called Alleima) steel. Mono-steel blade.
Length of the cutting edge is 233mm, measured in a straight line. If you follow the edge, it is just about 238mm long. Overall length is 368mm. Height of the blade at heel is 27mm. Handle is 129mm long. Thickness of spine at handle is 1.65mm, 0,8mm at the tip. Weight is 135g.
Hardened with cryo treatment to get everything out of the steel. Tempered back to 58 Rockwell to get its slight flexibility. Beautiful shaped thinly ground blade.
The handle is eight sided Japanese Wa style made from Jumo Carbon Dragon, and Ivory Snake in the ferule. Jumo is a German high tech resin material.
This knife can be used as a thin and light slicer, filleting knive or sujihiki. Sharpened by hand all the way to a 13000 honing stone at an approx. angle of 14 degrees each side.
