Product description
This is a hidden tang, octagonal handle, western-style chef's knife. The blade is AEB-L stainless steel, ground with a full distal taper and thin behind the edge, which measures 24cm from tip to heel. The handle is a combination of an aluminium bolster, black&red G10 and Grenadilla wood, held together with epoxy. The knife is suitable for any home or professional chef - the thin, tall blade is perfect for working on a cutting board, as there is plenty of knuckle clearance. The spine and choil are chamfered for pinch grip comfort.
The knife has a few scratches on the blade (see on the photo), a result of having the knife in the office for the past 2 years. We asked the local blacksmith (MvE knives) to make us a prototype (I'm co-founder of SharpEdge) of the knife that we later designed and developed together with Japanese smithy Yoshida Hamono: https://sharpedgeshop.com/products/hap-40-wide-gyuto-black-240mm.
The knife is freshly sharpened and is ready to use.
About The Maker
Mark van Elteren is a young knifemaker from Slovenia. He makes knives in a small workshop and does everything by himself, from profiling, drilling, grinding, heat-treating, and handle construction to final sharpening.
