My wife has told me that before I can buy any new knives to my collection I have to get rid of some first, so I am reluctantly selling a couple of my lesser used knives!

This knife is a 25.5cm Yaxell Super Gou Sujihiki, made of 161 layers of Damascus steel and an SG2 micro-carbide steel core with a hardness of HRC63. The Micarta handle is nicely weighted to give the knife a lovely balance in the hand.

The knife's dimensions are:

Not to be confused with the 23cm slicing knife currently available, this is the now discontinued 25.5cm Sujihiki slicer with an extra 2.5cm length for even smoother cuts.

The knife is in excellent condition, with no obvious nicks or chips on the blade and only ever sharpened gently on a fine grit stone or honed on a ceramic rod. I have only ever used it on Sunday roast joints which have been boned so that there was no risk of chipping the blade edge against bones. The steel is stainless and therefore resistant to rust, but I take care of my knives therefore it has always been hand washed and immediately dried straight after it has been used. It has always been stored securely in a knife block to prevent damage.

Despite this being a beautiful knife to own, I rarely get the chance to use it due to having other carving knives which I’m less precious about therefore it is time to move this knife on to someone who will get to enjoy it more often.

The Super Gou range is the top of the range model made by Yaxell and is sold in very limited quantities so it is becoming increasingly difficult to get hold of, in fact I have been unable to find anyone who still stocks this particular model of knife.

Unfortunately I don't have the original box but the knife will be very safely and securely packaged for shipping.
