The Kuro-uchi series knives are known for their traditional Japanese rustic style. Despite their affordable price, they offer exceptional quality as they are hand-forged. The blade is crafted from SUJ-2 steel, known for its impressive capabilities. With a hardness of 63-64 HRC, the blade delivers excellent sharpness and edge retention. Additionally, it is easy to sharpen when needed. It is important to take extra care of the blade by rinsing it well and drying it after each use. The name "kuro-uchi" refers to the unfinished appearance of the blade's top portion, which develops a protective dark patina over time.
