The usuba knife's flat edge ensures that it contacts the cutting board at all points, preventing accordion cuts and preserving the sharpness and shine of the cut side of the vegetables. The name "usuba" translates to "thin edge," highlighting the knife's fine blade and slender spine that minimize the crushing of vegetable fibers.

The Tojiro Shirogami 1 Usuba features a 'higashigata' style blade, which originated in the Kanto area of Japan. This blade style has a rectangular profile with squared off corners, and it boasts a completely flat cutting edge that aligns flush with the cutting board during slicing. The knife has a sturdy and slightly weighty construction, with a blade-heavy bias that enhances the efficiency of the 'utsu' cutting style. In the 'utsu' technique, the blade is kept parallel to the board and moved to the far side, utilizing the knife's weight to make clean, straight cuts through the produce.

Crafted with a core steel of Shirogami 1 (White #1) and covered on one side with a soft iron layer, this usuba knife features a construction known as "ni-mai awase" or single side cladding. It's important to note that this type of blade is susceptible to corrosion and requires careful drying after use. The knife is completed with a traditional handle made of Magnolia wood and buffalo horn, featuring an oval-shaped profile.
