Product description

Western handle Mono steel Gyuto from Zwilling Japan.
It has a lovely profile and comfortable handle.
Steel is supposed to be Aebl (stainless) @61 hrc.
Sharpened once, used very little it's basically new besides a few scratches (in pics) from cutting hard vegs.
Bear in mind the finish (as for soft stainless cladded knives) is extremely delicate and would scratch anyway if you don't plan just to cut tomatoes with it.
Pics of the spine showing how thin the blade is but very sturdy and forgiving, to use for those tasks where your extremely hard and thin jknives would fail.
