Japanese Style Sujihiki, thin Slicer, in SC 125 Monosteel. Acid Etched Blade, Forced Patina for a great natural look and protection. German Ultra Pure Carbon Steel by Lohmann, developed by Achim Wirz. There was only one batch of this steel made. Similar composition to Shirogami # 1 but cleaner and purer. 170 mm cutting edge length and 28 mm wide. Thickness of spine is 2 mm at heel, 1.6 mm in the middle and 0.35 mm near the tip. Weight is 88 g. Hardened to 63 HRC; quenched in saltwater. Handle is 133 mm in length made from reclaimed Indonesian Pheasantwood from an antique cutting board with a ferrule from black tamarind heartwood. Balance point is at the end of the Ferrule near where Handle and Blade meet. Spine and choil are rounded and polished smooth. All made by myself.
