Product description
108mm Hand-Forged San Mai Nakiri — Aogami 2 Core | 15N20 Walls | Pure Nickel Shim
A purpose-built slicing instrument for the meticulous cook. This 108mm San Mai Nakiri features an Aogami 2 core for razor-edge retention and a resilient, responsive cutting feel, sandwiched between contrasting 15N20 walls and finished with a pure nickel shim for a clean, bright accent along the weld. The blade carries a raw kurouchi surface—faithful to traditional blacksmithing—combining protective scale with the hand-forged texture that tells its story at a glance. A 42mm heel depth provides authority at the bolster for push-cutting and knuckle clearance on thicker produce.
Handle: wild-foraged Tamarisk, from the Pecos river, stabilized for durability and water resistance, shaped to an ergonomic profile that balances the blade’s nimble geometry. The tail is capped with a literal hornet’s nest, meticulously preserved and suspended in clear resin — a one-of-a-kind focal point that marries the wild origin of the wood with a modern, sculptural detail.
Each knife is a singular expression of material and craft: designed for daily use, finished for longevity, and sculpted to stand out on any prep counter.
