Really lovely knife, I generally just prefer carbon and iron clad as I’m getting more into polishing recently
Maruyama of Hado fame opened up his new store Enjiki this year and this is one of his beautiful new knives. Really fantastic, like a Tetsujin with food release is how I’d describe it.
Forged by yamatsuka who some say has best Ginsan in Sakai, and has a custom snakewood black horn handle I put on. The handle is real nice, and is actually seamless and feels very premium in hand, placing the valance point perfectly at the ricasso. It honestly feels very good in hand, from one knife nerd to another..!
It has some use and very light scratches consistent with home cooking, tried to highlight these in pics. I’ve sharpened it once at a very low angle (20’ inclusive or so) and it’s held up beautifully. On Chocera 800/3000/tomo nagura (medium fine)and maintained in a strop.
These can be hard to get sometimes for some reason with importing and exporting considerations, particularly into Europe or so I hear. Message any questions or whatever if you have any!
