The ZDP-189 Santoku Black is meticulously crafted within the renowned forge of Yoshida Hamono in Japan. This family-owned company boasts a longstanding tradition of producing cutting-edge tools and Japanese swords, including revered katanas, through manual craftsmanship. Yoshida Hamono holds extensive expertise in the time-honoured art of forging HAP40 steel using traditional techniques.
The essence of this knife is formed from HAP40 steel, a deliberate selection backed by methodical testing which has underscored its exceptional qualities and enduring sharpness. The steel is thoughtfully laminated, featuring a robust steel core enveloped by a more malleable outer layer of stainless steel. This composition ensures sustained sharpness over an extended period, eases the sharpening process due to the pliability of the outer layer, and acts as a protective shield for the core steel against external elements.
The Kuro-uchi finish, evidenced by the unpolished (black) section on the upper side of the blade, has matured into a deep patina. This patina serves a dual purpose: it safeguards the blade while endowing the knife with a traditional Japanese aesthetic.
This knife holds a unique distinction as a shorter variant of the Santoku at 155mm, a rarity in production. Its exceptional thinness further sets it apart. It features a Japanese Wa handle made from magnolia and buffalo horn. This is a professional workhorse boasting unparalleled sharpness, with a staggering hardness of 67 HRC.
