Product description
I have a very lightly used Hado Sumi 240mm in White #2. I have used it 5 times to cut up sausages and steak to get that blueish patina forming. I have too many gyutos and I am getting rid of some. I have only stropped once. It has the Sakura/cherry blossom tree bark, full wrap handle.
The sakura bark-wrapped Japanese knife handle refers to a traditional, highly artistic, and functional crafting technique known as Kabazaiku (Cherry Bark Work). This technique involves covering a knife handle (often made of wood) with the natural bark of the mountain cherry tree (Yamazakura).
The blacksmith is Tanaka, Yoshikazu and the sharpener is Tadataka, Maruyama.
