Up for sale is a stunning Yoshikane Hamono Kiritsuke Gyuto 240mm, handcrafted in Sanjo, Japan, by 4th generation blacksmith Kazuomi Yamamoto. Yoshikane is world-renowned for their incredible heat treatment and "workhorse" grind that tapers to a laser-thin edge.
This specific knife features a White #2 (Shirogami-2) carbon steel core clad in stainless steel with a beautiful Nashiji (pear skin) finish. This combination gives you the extreme sharpness and ease of sharpening of carbon steel, with the low-maintenance benefits of stainless cladding.
