Product description

Description:
Up for sale is a stunning Yoshikane Hamono Kiritsuke Gyuto 240mm, handcrafted in Sanjo, Japan, by 4th generation blacksmith Kazuomi Yamamoto. Yoshikane is world-renowned for their incredible heat treatment and "workhorse" grind that tapers to a laser-thin edge.

This specific knife features a White #2 (Shirogami-2) carbon steel core clad in stainless steel with a beautiful Nashiji (pear skin) finish. This combination gives you the extreme sharpness and ease of sharpening of carbon steel, with the low-maintenance benefits of stainless cladding.

Key Features:

Blacksmith: Kazuomi Yamamoto (Yoshikane Hamono).

Steel: Shirogami #2 core with Stainless Cladding (San Mai).

Finish: Beautiful textured Nashiji.

Blade Geometry: Aggressive distal taper (thick at the spine/heel, needle-thin at the tip).

Handle: Premium Octagonal Wenge wood with a Buffalo Horn ferrule.

Condition: Brand New in Box (includes original packaging and documents).

Specifications:

Blade Length: 241mm

Overall Length: 401mm

Spine Thickness: 3.1mm at heel / 0.1mm at tip

Blade Height: 57mm (Plenty of knuckle clearance!)

Weight: 241g

Hardness: 63 HRC

Why Yoshikane?
Their knives are famous for being "mid-weight" workhorses. They feel sturdy in the hand but cut like a laser because of the thinness behind the edge. This 240mm Kiritsuke profile is perfect for long, clean slices and precise tip work.
