Product description
For sale is a Steel by Lundberg's gyuto made by Markus Turesson in the Karlskrona series, which is made from mostly reclaimed materials. The handle is oak reclaimed from a decommissioned navy ship, and the cladding is from a railway line.
Performance-wise, it's no slouch at all - it has a bit of convexity, and the profile is honestly pretty great. The edge is nail flexing for the first half, and just slightly thicker than that for the rest of the way. Choil and spine are rounded and comfortable.
This has been used, and it has been sharpened, but as a result of being a bit sloppy while doing low angle sharpening, I scuffed up the finish on one side, which I've attached photos of. As a result, I've marked this down significantly from the retail price.
