Product description

One of the latest offers from Hitohira, forged by Kikuchiyo and sharpened by Ren.
This 240 gyuto is made of ginsan steel (stainless).
Fit and finish is spectacular, both the blade and spine and choil, rounded and mirror polished.
Handle is a beefy octagonal ho wood and horn of very good quality. I've polished and sealed the wood improving the original state (danish oil + waxed).
Edge just stropped lightly on a chosera 3k to improve it, not great as arrived.
