Product description
For sale is a Hamono Anryu 240mm Gyuto. The blade is White #2 steel, Damascus with a Kurouchi finish. Soft iron is used to create the damascus pattern and is then forge-welded to the Shirogami core. This gives the knife a beautiful pattern on the bevels. The handle is Oval Rosewood with a Pakka ferrule.
I bought the knife new several years ago. It has never been used or sharpened. Taken out of the box only to photograph and measure.
This is from the Anryu workshop, made by Takumi Ikeda, Katsushige Anryu’s nephew.
