Up for sale is a Yanagiba knife forged by Hideo Kitaoka. The blade is shirogami #2 with a damascus pattern. The damascus is created with layers of steel which are forged together. The result is a unique and beautiful design. Shirogami#2 steel is easy to sharpen and takes a very find edge with good edge holding capability. The blade is listed as 300mm, but actually measures 287mm. The length of the yanagiba allows the sushi chef to make one long, continuous cut, rather than several shorter cuts. This retains the cell structure of the fish and enhances the flavor.
Hideo Kitaoka, a third-generation master blacksmith from Echizen, is the current owner of Kitaoka Hamono, founded in 1868. With over 50 years of experience, he specializes in crafting exquisite single-bevel knives using traditional Japanese techniques. His passion for preserving craftsmanship is evident in his exceptional work.
This knife is from my personal collection. I bought it new a few years ago. It has never been used or sharpened.
