The Hideo Kitaoka damascus shirogami#2 usuba 180mm is a handcrafted Japanese vegetable knife forged in Echizen by third-generation master blacksmith Hideo Kitaoka. This single-bevel knife features a Hitachi Shirogami #2 carbon steel core with iron-clad damascus construction in nimai style. The blade measures 169mm with 46.7mm height. This traditional usuba is designed for precise vegetable cutting in Japanese cuisine. Shirogami #2 is known for its ability to take a very fine edge. The iron cladding will develop a natural patina over time with use.
About the blacksmith: Hideo Kitaoka is a third-generation master blacksmith from Echizen and current owner of Kitaoka Hamono, founded in 1868. With over 50 years of experience, he specializes in crafting single-bevel knives using traditional Japanese techniques.
This knife is from my personal collection. I bought it new a few years ago. It has never been used or sharpened.
