Product description

A 260mm gyuto made by Amano Hamono. It is tamahagane core steel clad in a Damascus pattern (also using a mix of tamahagane and iron) he calls Homuragitae. It comes with a western handle as well which is quite uncommon.

“This blade is forged using the flame-forging technique, which is inherited from the swordsmiths of the Mito domain. Using tamahagane as the main raw material, five types of iron are stacked and folded over ten times. The total number of sheets is 5120.”

The knife cuts VERY well due to its edge thinness, height, and weight behind it. I was really impressed by how this thing performed because it’s a little wabi-sabi. The spine has a non-traditional taper where it seems to get a little thicker past the midpoint. This brings a lot more weight forward and behind the edge. The handle was custom but has a few cracks running through it that the craftsman filled. Overall an impressive- if not a bit curious knife.
